Makes 5-6 small tortillas
Mix in a large bowl until dissolved:
1/4 cup warm water
4 tablespoons oil
1 teaspoon vinegar
1 teaspoon salt
2 teaspoons sugar
Measure and mix dry ingredients before adding to liquid:
2 cups flour
1/2 teaspoon baking powder
Combine until smooth. On a lightly floured board divide dough into 5-6 balls. Roll into tortillas. Don’t worry if they aren’t perfectly round.
Preheat a Teflon pan and cook one at a time, turning when bubbled up. Adding oil is not necessary. Stack on a plate covered by another plate to keep warm.
Great for burritos, fajitas or with eggs.
